Welcome to my kitchen! Today, I’m excited to share with you a beloved Nigerian recipe: Delicious Akara. Akara, also known as bean cakes or bean fritters, is a popular breakfast dish in Nigeria made from black-eyed peas. It’s crispy on the outside, fluffy on the inside, and incredibly flavorful. Best of all, this recipe is quick and easy to make, perfect for both beginners and seasoned cooks alike. Follow along as I guide you through each step to create this tasty and nutritious dish.

Ingredients Needed
-2 cups black-eyed peas (or peeled beans)
-1 medium onion, finely chopped
-1-2 fresh peppers (scotch bonnet or habanero)
-Salt to taste
-Water (for blending)
-Vegetable oil (for frying)

Preparing the Akara Batter
Soaking the Beans: Start by soaking the black-eyed peas in water for about 30 minutes to soften the skins. This makes it easier to peel the beans.
Peeling the Beans: Rub the soaked beans between your hands to remove the skins. Rinse and repeat until most of the skins are removed, and you’re left with white, peeled beans.
Blending the Beans: In a blender, combine the peeled beans, a little water (just enough to help with blending), chopped onions, and peppers. Blend until you have a smooth, thick paste. The consistency should be thick enough to hold its shape but smooth enough to scoop easily.
Seasoning the Batter: Transfer the bean paste to a mixing bowl, add salt to taste, and mix well to combine all the ingredients evenly.

Frying the Akara
Heating the Oil: Heat vegetable oil in a deep frying pan or pot over medium heat. The oil should be hot enough that a small drop of the batter sizzles and rises to the surface quickly.
Scooping the Batter: Use a spoon or your hands to scoop small balls of the batter and carefully drop them into the hot oil. Fry in batches to avoid overcrowding the pan.
Frying Until Golden Brown: Fry the akara balls, turning occasionally, until they are golden brown and crispy on the outside. This should take about 5-7 minutes per batch.
Draining the Akara: Use a slotted spoon to remove the akara from the oil and drain them on a paper towel-lined plate to remove excess oil.

Serving the Akara
Serve your delicious akara hot, either on their own or with a side of pap (ogi), custard, bread, or sauce. They make a perfect breakfast, snack, or appetizer that everyone will love.
