Let's Make The Delicious Nigerian Egg Rolls. See Recipe
This is a popular Nigerian Street snack. it's commonly used these days as breakfast.
Having one of these with a cup of tea or coffee, you are good for the rest of the day... almost 😀 The recipe is quite simple and the process is quick.
Recipe :
For 7-8 Egg Rolls:
-7/8 Boiled eggs
Dough:
- 2 cups all purpose flour
- 1/2 cup sugar
-1 tbsp. baking powder
- 1/2 tsp salt
- 2 tbsp. butter (partially melted)
- 1 medium fresh egg
- 1 tbsp. vanilla extract
- 3/4 milk (could use warm water)
Direction:
- In a mixing bowl, add the flour, sugar, salt and baking powder and mix well.
- Pour in you partially melted butter, fresh egg, milk and vanilla extract and mix well till fully combined.
- Roll-in the boiled egg in a little piece of the dough, one after another to cover the boiled egg properly. see video demo
- Fry with vegetable oil in a semi low heat.
Tip:
-Sprinkle some more flour into the dough mixture if it appear to be to soft to roll.
-You will also need a rolling pin for a smoother and easier rolling process.
- Any extra dough left is good to fry as buns or make chin-chin (very low heat for buns)
