Shortbread cookies are a great choice for snacks and tea because they are a classic treat that is simple and delicious. They are crunchy, buttery cookie that is light and not overly sweet. Shortbread cookies pair well with tea, coffee, and other beverages, making them a versatile snack option. Additionally, they are usually low in sugar and fat, making them a healthier choice than other cookies.
Recipe"-1/2 cup & 1 tbsp Sugar-1 Stick Butter (4 oz.)-1 Cup All Purpose Flour-1/2 Corn starch-1/2 tsp salt-1 Tbsp. Vanilla extract
Procedure/ Direction
1. Preheat your oven to 350°F (175°C).
2. In a large bowl, beat together 1 cup (225g) softened butter and ½ cup (100g) caster sugar until light and fluffy.
3. Beat in 1 teaspoon vanilla extract.
4. Sift in 2 cups (250g) plain flour and mix until combined.
5. Tip the mixture into a greased 8-inch (20cm) square cake tin.
6. Press the mixture down firmly and evenly with the back of a spoon.
7. Prick the surface of the shortbread with a fork.
8. Bake in the preheated oven for 25-30 minutes until lightly golden.
9. Cut into squares or slices while still warm.
10. Leave to cool before serving.
